Japanese: Agedashi Tofu

(serves 5-6)
Ingredients:
- 1 teaspoon dashi powder
- 1 cup water
- 2 tablespoons mirin
- 3 tablespoons soy sauce
- 7 oz fried tofu (about 20 cubes)*
- ¼ cup fresh ginger, grated
- 3 stalks scallions, finely chopped (green part only)
- Bonito flakes (for garnish)
Procedure:
- Make the sauce: combine dashi powder, water, mirin, soy sauce, stir well
- Warm fried tofu in microwave for about 1-2 minutes
- Transfer tofu to serving bowls
- Pour some sauce over tofu
- Sprinkle ginger and scallions on top
- Garnish with bonito flakes
*Optional: You can fry your own tofu in oil (coconut or canola preferred). Drain a block of firm tofu in a colander for 30 minutes, then cut into 12 pieces. Dust with cornstarch, then deep fry until light brown (about 2 minutes, turning once). Drain on paper towels before serving.
